MANADO STYLE CHICKEN CURRY (AYAM TUTURAGA)


Ayam Tuturaga is Chicken Curry originated from Manado. 
It is different from Indonesian chicken curry because it has more ingredients such as panda leaves and eggs which are not used in the Indonesian Chicken Curry.
As A result, it tastes more yummy than the Indonesian Chicken Curry.


This dish was made to participate in MASBAR (Masak Bareng yuuks) competition with thema Manado Food.

INGREDIENTS:

1 whole chicken, cut into 8 pieces
1 sheet of panda leave, cut into 2 pieces
1 stick of lemon grass, crushed
2 eggs, beaten
2 tablespoon lime juice
5 tablespoons of vegetable oil to sauté
500 ml of coconut cream

GROUND SPICES:

7 red chillies
8 onions
3 cloves of garlic
2 teaspoon of turmeric powder
2 cm of ginger
5 candlenuts
salt to taste
pepper to taste
1 teaspoon chicken powder

-----> Grind all the spices above

HOW TO MAKE:

Heat oil and sauté Ground Spices, Lemongrass, and Pandan Leaves until fragrant.
Then, add chicken and cooked until the chicken change colour.
Pour beaten egg, stir until the egg form small granules.
Pour coconut cream and cook until the chicken is fully cooked and the liquid part evaporated (thickened).
Add lime juice and mix well.
Lift and serve with warm steam rice.

BAHAN :

1 ayam utuh, potong menjadi 8 bagian
1 lembar daun pandan, potong menjadi 2 bagian
1 batang serai, memarkan
2 telor ayam, kocok lepas
2 air perasan jeruk nipis
5 sdm minyak goreng untuk menumis
500 ml santan

BUMBU HALUS:

7 cabe merah
8 bawang merah
3 siung bawang putih
2 sdt bubuk kunyit
2 cm jahe
5 kemiri
Garam secukupnya
Merica secukupnya
1 sendok teh bubuk kaldu ayam

-----> Haluskan semua bumbu halus jadi satu

CARA MEMBUAT:

Panaskan minyak dan tumis bumbu halus, serai dan daun pandan hingga harum.
Lalu masukkan potongan daging ayam dan masak hingga kaku.
Masukkan telor kocok, aduk hingga telur membentuk gumpalan kecil.
Tuang santan dan masak hingga daging ayam dan kuah mengering atau mengental.
Tambahkan air jeruk nipis, aduk rata, Angkat.
Sajikan Selagi hangat.

GLUTINUOUS RICE FLOUR BALLS PORRIDGE (BUBUR CANDIL)


Glutinuous Rice Flour Balls Porridge (Bubur Candil) is a traditional Indonesian glutinuous rice balls which provide sweet savoury taste.

RECIPE IN ENGLISH


Glutinous Rice Flour Balls Porridge
(Bubur Candil)

Ingredients :

200 grams of glutinous rice flour
50 grams of rice flour
100 ml of water
200 grams of brown sugar / palm sugar
1 litre water
2 leaves pandan
2 tsp. glutinous rice flour and 2 tsp. rice flour


Coconut milk sauce:

500 ml coconut milk
½ tsp salt
1 pandan leaves 


How to Make The Porridge:

Place the glutinous rice flour and rice flour in a medium sized bowl.
Pour 100 ml of water little by little (Don’t pour all of the water into the bowl at once) until smooth.
Shape the dough into small balls like marbles.(*)
Boil the palm sugar and  1 litre of water with pandan leaves in a medium saucepan.
Cook until the water is boiling and sugar dissolves.
Lift and Filter.
Bring to a boil again, then insert the circle of dough (*), let it float. Stir well. 
Cook for about 5 minutes, until the balls look transparent and floating to the surface.
Pour 2 tsp. glutinous rice flour and 2 tsp. rice flour which have been mixed with a little water.
Stir and mix well until thicken.
Take off from the heat and set aside.


How To Make The Sauce:

For the sauce, place the coconut milk, pandan leaf and pinch of salt.
Bring it to the boil.
Lift and Set aside.


To Serve :

Let them cool down in a room temperature.
Pour the porridge into bowl as you wish to serve And pour 2 tbsp. coconut milk sauce  on top the porridge.
Mix it first before you eat it.

Bahan-Bahan Yang Diperlukan :

200 gr tepung ketan
50 gr tepung beras
100 ml air
200 gr gula jawa
1 liter air
2 lembar daun pandan
2 sendok teh tepung ketan dan 2 sendok teh beras


Saus santan:

500 ml santan
½ sdt garam
1 lbr daun pandan


Cara Membuat Bubur Candil :

Taruh tepung ketan dan tepung beras dalam mangkok yang berukuran medium.
Tuang 100 ml air sedikit demi sedikit (jangan tuang air sekaliguskedalam mangkok) hingga kalis.
Bentuk bulat-bulat seperti kelereng. (*)
Masak gula jawa dan daun pandan dengan 1 liter didalam panic sedang.
Masak air sampai mendidih dan gula larut.
Angkat dan Saring.
Didihkan lagi, lalu masukkan bulatan adonan (*) , biarkan sampai mengapung. Aduk rata. Angkat.
Masak selama 5 menit sambil terus diaduk, sampai bola-bola terlihat tembus pandang atau bening dan mengapung.
Tuang 2 sendok teh tepung ketan dan 2 sendok teh tepung beras.
Aduk-aduk hingga merata dan kental.
Angkat dan sisihkan.


Cara Membuat Saus Santan :

Untuk sausnya, Tuang kedalam panic kecil,  santan, daun pandan dan sedikit garam
Masak semua bahan hingga mendidih.
Angkat dan sisihkan.


Penyajiannya :

Biarkan bubur sampai dengan keadaan dingin atau suhu ruangan.
Tuang bubur sesuai selera kedalam mangkuk.
Tuang 2 sendok makan saus santan diatasnya.
Aduk rata terlebih dahulu sebelum dimakan.

HAPPY 3rd BIRTHDAY LBT (TRIPLE LAYERED CAKE (LAPIS SURABAYA))


Happy 3rd Birthday LBT. I wish you long life, have a good team work and continuously give benefits to the members. 


I finally could submit this assignment on time.

I made this birthday cake on last Saturday. The cake base that I chose was Lapis Surabaya (Triple Layered Cake) because this cake is my favourite.
This cake is very popular in Indonesia, known for its high quality and expensive price. It is very tasty and the texture is very moist. 
Triple Layered Cake consist of two layers of vanilla cakes and one layer of chocolate cake, with strawberry jam in between the layers. The number of egg yolks used in this cake is unbelieveably huge, 30 egg yolks.

I chose flower theme cake decoration because I really love flowers. It creates a sense of freshness and vivacity. The decorative material was made of fondant rather than butter cream because fondant looks more attractive, neat, faster to shape, and easily available in supermarkets. White and pink were chosen because they are bright colours and symbolise positive emotions.


I used fondant cutter to create the flower shapes and letters. After the flowers were spread on top of cake surface, I put beads at the centre of each flower sheet. The flower that cover the whole surface of the cake imitates a garden.


I'm quite satisfied with the result because the details are quite neat and the colours are consistent. Overall, it was amazing. Also, the letter shaped fondant cutter has helped me to create beautiful letters which said "Happy Birthday LBT"


I present this cake to celebrate LBT's birthday. I hope LBT likes it. 
We can now see the recipe as below:


RECIPE IN ENGLISH


TRIPLE LAYERED CAKE
(LAPIS SURABAYA)

TAKEN FROM:
FATMAH BAHALWAN (NCC)

INGREDIENTS:

30 egg yolks
300 grams sugar
375 grams butter, whip until light and pluffy
150 grams flour
1 tablespoons mocca pasta
Strawberry jam


HOW TO MAKE:

Preheat the oven at 180 degree celcius.
Brush baking pan with butter and line with baking paper and brush again butter on top of the baking paper.
Beat egg yolks and sugar until pale and thick, turn off the mixer.
Add the whipped butter and stir well.
Add the flour, Mix well.
For the 3 layers cake, divide the dough into 3 part.
Add 1/2 tablespoons mocca pasta into 1 part of the dough, mix well.
Pour the batter each into 20X20X4 cm baking pan.
Bake for 20 minutes or cake springs back when touched.
Let the cake cool.


TO ASSEMBLY :

When the cakes are cooled.
Place one yellow layer below and spread the top with strawberry jam.
After that, put the chocolate layer on the top and spread with strawberry jam.
The Last one, put the yellow layer on the top.


RESEP DALAM BAHASA INDONESIA


TRIPLE LAYERED CAKE

BAHAN YANG DIBUTUHKAN:

30 butir kuning telor
300 gram gula pasir
375 gram mentega / butter, kocok sampai putih dan mengembang
150 gram tepung terigu
1 sendok makan pasta moka
Selai Strawberry


CARA MEMBUAT:

Panaskan oven 180 derajad celcius
Olesi loyang dengan mentega, lapisi dengan kertas kue dan olesi kembali kertas kue dengan mentega.
Kocok telur dan gula hingga kental, matikan mixer.
Masukkan mentega kocok, aduk rata.
Masukkan terigu, aduk rata.
Bagi adonan menjadi 3 bagian.
Untuk 1 bagian adonan tambahkan 1/2 sendok makan pasta moka, aduk rata.
Tuang setiap adonan kedalam setiap loyang ukuran 20X20X4 cm.
Oven selama 20 menit.
Biarkan dalam keadaan dingin.


CARA PENYUSUNANNYA:

Letakkan layer berwarna kuning di bagian bawah.
Kemudian oles atasnya dengan selai strawberry.
Letakkan layer coklat diatas layer kuning.
Oles dengan selai strawberry.
Dan yang terakhir Letakkan Layer kuning diatasnya.

KFC STYLE FRIED CHICKEN (AYAM GORENG CRISPY ALA KFC)


RECIPE IN ENGLISH


KFC STYLE FRIED CHICKEN
(AYAM GORENG CRISPY ALA KFC)

INGREDIENTS:

20 pcs of chicken
(1 chicken decided into 8 pieces)


MARINATING SPICES:

3 cloves of garlic
1/2 tablespoons ground pepper
1 brick of salt

---> Grind all the ingredients


COATING INGREDIENTS

3 kg of flour
1 tablespoons of baking powder
2 tablespoons of salt
1 tablespoons of pepper
2 tablespoons chicken powder such as Masako, or sultana powder

-----> Mix well


BUTTERMIX:

250 gr of the coating ingredients
2 eggs
sufficient of water


HOW TO MAKE:

Simmer chicken into marinating spices for approximately 1 hour, the longer the better in absorbing the spices, but not too long.
Lift and drain, then prepare butter mix.
Heat frying oil up to 160 degree celcius.
Dip chicken into butter mix, then into the spiced flour. Cover the chicken with the coating flour evenly while tapping gently.
Put the coated chicken into preheated frying pan up to 160 degree celcius for about 12-15 minutes.

BAHAN YANG DIBUTUHKAN:

20 pcs ayam
(1 ekor ayam dipotong menjadi 8 bagian)


BUMBU RENDAMAN:

3 siung bawang putih
1/2 sdm lada bubuk
Garam 1 blok

---> Dihaluskan


BUMBU TERIGU:

3 kg terigu
1 sdm baking powder
3 sdm garam
1 sdm lada bubuk
2 sdm kaldu bubuk sultana/ 2 sachet masako

----> Aduk rata


BUTTERMIX:

250 gr adonan terigu
2 butir telur
Air secukupnya


CARA MEMBUAT:

Rendam ayam dlam bumbu rendaman 'urleb 1 jam, lebih lama lebih mereap ( jgn kelamaan juga) Setelah diremdam tiriskan, siapkan adoan butter mix
Panaskan minyak s/d 160 derajat celsius
Masukkan ayam ke dalam adonan buttermix
Dari buttermix masukkan ke dalam tepung terigu yg sdh dibumbu
Diaduk hingga rata dan agak ditekan2
Masukkan ke dalam wajan yg sdh panas 160 drajat masak kurleb 12 - 15 menit
