RECIPE IN ENGLISH


ROTI MANIS COKLAT
(CHOCOLATE BREAD)



Water Roux :

50 grams of high protein flour
250 ml of water

Ingredients:

125 grams of water roux
250 grams of high protein flour
100 grams of cake flour
10 grams of instant yeast
100 ml of water
35 grams of butter
27 grams of milk powder
30 grams of sugar
¼ tsp salt



Spread (mix) :

1 egg yolk
1 tsp honey
1 tsp milk powder
1 tsp water

Contents:

 chocolate sprinkle to taste


Water Roux:

Mix flour with water.
Cook until thickened but do not boil or thick rough. Remove and let cool.
Take as much as 125 grams. The rest can be stored in the refrigerator to be used again, as long as the color is not changed.


How to Make Bread:

Combine all dry ingredients and stir well.
Enter the cold starter dough, butter and pour a little water.
Knead until the dough becomes smooth and elastic.
Spherical shape, then cover with a towel, let stand 1 hour or until the dough at room temperature depends to 2 times greater.
Take the dough, put the stuffing chocolate srpinkle then rounded shape or form according to taste, let stand until dough is fluffy again.
Brush with egg yolk and sprinkle chocolate sprinkle on top, bake for 10 minutes (preferably using fire up).
Remove and spread with a little butter.

50 gram tepung terigu protein tinggi
250 ml air

Bahan:

125 gram water roux
250 gram tepung terigu protein tinggi
100 gram tepung terigu protein sedang
10 gram ragi instant
100 ml air
35 gram mentega
27 gram susu bubuk
30 gram gula
¼ sdt garam


Olesan (aduk rata)

1 kuning telur
1 sdt madu
1 sdt susu bubuk
1 sdt air

Isi :

Meises secukupnya
Atau isian yang lain sesuai selera


Water Roux :

Campurkan terigu dengan air.
Masak hingga mengental tapi tidak sampai mendidih atau bergerindil. Angkat dan dinginkan.
Ambil sebanyak 125 gram. Sisanya bisa disimpan di kulkas untuk dipakai lagi, asalkan warnanya tidak berubah.


Cara Membuat Roti :

Campurkan semua bahan kering, aduk.
Masukkan adonan starter yang sudah dingin, mentega dan kucuri air, sedikit-sedikit.
Uleni adonan hingga menjadi kalis dan elastis.
Bentuk bulat, lalu tutup dengan serbet, diamkan 1 jam atau tergantung suhu ruangan hingga adonan menjadi 2 kali lipat.
Ambil adonan, beri isian bentuk bulat atau bentuk sesuai selera, diamkan hingga adonan kembali mengembang.
Olesi dengan kuning telur, dan taburkan meises diatasnya, panggang selama 10 menit(disarankan memakai api atas).
Angkat dan olesi dengan sedikit butter.

MANGUT IKAN
(SMOKED FISH IN COCONUT MILK)


Ingredients:

5 pieces of smoked fish
Tempe taste then cut according to taste
10 pieces of small red chilli whole (bird's eye chili)
1 piece of galangal
2 bay leaves
Salt, sugar
800cc coconut water
Basil or lemongrass


Spices:

3 pieces of red chilli
3 cloves garlic
4 pieces of red onion
2 cm kaempferia galangal


How to make:

Grilled fish for a while to dry.
Sauté the spices, bay leaves, galangal until fragrant add the coconut milk, tempeh, salt, sugar, and cook until flavours mingle
-Add the smoked fish, cook until boiling, put basil or lemon grass, stir well, put a small red chilli.

Bahan:

5 buah Ikan Pari asap
Tempe secukupnya potong2
10 buah Cabe merah kecil utuh
1 potong lengkuas
2 daun salam
Garam, gula
800cc Air santan
Kemangi atau serai


Bumbu halus:

3bh Cabai merah
3bh Bawang putih
4bh Bawang merah
2cm kencur


Cara membuat:

Bakar Ikan sebentar supaya kering.
Tumis bumbu halus, salam, lengkuas hingga harum tambahkan santan, tempe, garam, gula, masak hingga bumbu meresap
-Tambahkan ikan asap, masak hingga mendidih, masukkan daun kemangi atau serai, aduk rata, masukkan cabe merah kecil.

ROTI SOSIS KEPANG
(SAUSAGE BREAD BRAID)

Ingredients:

500 grams flour
100 grams of sugar
100 grams of butter / margarine
11 grams instant yeast
½ tsp bread improver
4 egg yolks item
300 ml of water
2 whole egg yolks for sprinkling
grated cheese to taste for sprinkling on top

Sausages 18 pieces


How to make:

Mix all dry ingredients and egg yolks, mix well
Enter 200ml water, stir and knead until smooth.
Enter the butter, knead again until smooth about 20 minutes.
The dough is ready to be filled and shaped-form.
Allow the dough until fluffy 2 times, spread with egg yolk
and sprinkle grated cheese on bread
oven with a temperature of 200 degrees Celsius until cooked. (less is more. 20 minutes)   

   Note:   
  
The remaining 100ml of water just in case aja klo less soft dough adding little by little.


How to Establish a braid:

Using a wooden roller, roller dough into an oval shape to a width of about 10 cm. Place the sausage in the middle of the dough, make 6 slices on either side of the dough. Then fold the slices onto each other to form such alternate braids and sausages covered with batter.

(SAUSAGE BREAD BRAID)

Bahan :

500 gr  tepung terigu
100 gr  gula
100 gr  mentega / margarine
1 bks instant yeast
½ sdt bread improver
4 btr kuning telor
300 ml  air
2 butir kuning telor untuk olesan
parutan keju secukupnya untuk ditabur diatas roti
Sosis 18 buah


Cara membuat :

Campur semua bahan kering n kuning telor, aduk rata
Masukkan air 200ml, aduk dan uleni sampai rata.
Masukkan mentega, uleni lagi sampai kalis lk. 20 menit.
Adonan siap diisi dan dibentuk-bentuk.
Diamkan adonan hingga mengembang 2 kali, olesi dengan kuning telor
taburi keju parut diatas roti tersebut
oven dengan suhu 200 derajat celcius hingga matang.(kl. 20 menit)   

  Catatan : 
 

Sisa air 100ml buat jaga-jaga aja klo adonan kurang lembek tambahkan sedikit demi sedikit.


Cara Membentuk Kepangan:

Dengan menggunakan kayu penggilas, gilas adonan hingga menjadi bentuk oval lebar sekitar 10 cm. Letakkan sosis di tengah adonan, buat 6 irisan di sisi kiri dan kanan adonan. Kemudian lipat irisan tersebut keatas saling berselang seling sehingga membentuk seperti kepang dan sosis tertutup oleh adonan.

MAKASAR GRILLED FISH
(IKAN BAKAR BUMBU MAKASAR)


Material:

1 fish baramundi

Spices:

8 cloves garlic
3 pieces of candle nut
3 cm turmeric
3 cm ginger
2 tsp salt


To spread:

2 tablespoons margarine or  vegetable oil
2 tablespoons soy sauce

How to make:

Clean the fish and then cut into thin slanting slices (cut off)
Then give the spice paste.
Store in the refrigerator (keep overnight).
When would be grilled or baked in the oven, do not forget to brush the fish with the material spread
Bake or Grill until done (do not forget to turn the fish that mature evenly)

Bahan-Bahan:

1 ekor ikan baramundi

Bumbu halus :

8 siung bawang putih
3 buah kemiri
3 cm kunyit
3 cm jahe
2 sdt garam


Untuk olesan :

2 sdm minya sayur atau margarin cair
2 sdm kecap manis


Cara membuat :

Bersihkan ikan kemudian potong-potong miring tipis (dikerat)
Kemudian beri bumbu yang sudah dihaluskan.
Simpan dalam lemari es (disimpan semalaman).
Ketika akan dipânggang didalam oven atau dibakar, jangan lupa untuk mengoles ikan dengan bahan olesan
Panggang atau Bakar hingga matang (jangan lupa untuk membalikkan ikan agar matangnya merata)
