Cap cai sometimes spelled Cap cay (Chinese: 雜菜; pinyin: zácài; Pe̍h-ōe-jī: cha̍p-chhài; literally "mixed vegetables") is the Hokkien-derived term for a popular Chinese Indonesian stir fried vegetable dish that originates from Fujian cuisine.
Various vegetables such as cauliflower, cabbage, Chinese cabbage, Napa cabbage, carrot, baby corn, mushroom, and leek were chopped and stir fried in a wok with small amount of cooking oil and water, added with chopped garlic and onion with salt, sugar, soy sauce, ang ciu Chinese cooking wine and oyster sauce for taste. The liquid sauces were thickened using maizena (corn starch). Cap cai could be made as vegetarian dish, or mixed with meats such as chicken meat, liver or gizzard, beef, fish, shrimp or cuttlefish, and slices of beef or fish bakso (meatballs). The type and numbers of vegetables differ according to recipe variations and the availability of vegetables in each household, but the most common vegetables in simple Cap cai are cauliflower, cabbage and carrot.

INDONESIAN STYLE VEGETABLE STIR-FRY

INGREDIENTS :
1 carrot, peeled skin, cut as you wish into ½ cm
1/4 cauliflower, cut as you wish and briefly blanch in
boiling water
1 cup of bok choy / green mustard, cut into 4 cm in length
1 cup of baby corn, cut as you wish into ½ cm
8 meatball, slices
150 gr shrimp, remove the skin and head.
1 onions, thinly sliced.
5 cloves of garlic, finely chopped.
4 sticks of shallot, take the green part and cut into 1 cm.
3 tablespoons vegetable oil for sauteing.
SAUCE:
3 tablespoons of fish sauce
3 tablespoons of oyster sauce
2 tablespoons corn-starch , dissolved in a little of water
250 ml of chicken broth
1 tablespoons of Indonesian chili sauce (I used ABC’s brand)
1 tablespoons of Tomato sauce (I Used ABC’s brand)
Salt , Sugar, and Pepper to taste
HOW TO MAKE :
Heat 3 tbsp. vegetable oil in frying pan.
Add in and saute garlic and onion until fragrant.
Then, insert the meatballs.
Saute until it is cooked.
Then add the shrimp, stir well and cook until shrimp changes color.
Enter the carrot, cabbage flower, and baby corn.
Enter the chicken broth, fish sauce, oyster sauce, chili sauce, tomato sauce, salt, sugar and pepper.
Mix well and cook until they are soft.
Then Enter the vegetables (bok choy and shallot), mix well
around 1 minutes.
Add in corn starch mixture and stir until the sauce is
thickened
Remove from the heat and place on the serving plate.
Serve immediately with rice and other dishes.

BAHAN YANG DIPERLUKAN :
1 buah wortel, kupas kulitnya, potong sesuai selera sebesar
½ cm
1/4 kembang kol, potong sesuai dengan kuntumnya, cuci dan
rendam didalam air panas.
1 cangkir bok choy, potong dengan ukuran 4 cm.
1 cangkir jagung muda ukuran kecil, potong sesuai selera
sebesar ½ cm
8 biji bakso sapi, potong sesuai selera.
150 gr udang, buang kulit dan kepalanya.
1 buah bawang bombay, potong tipis-tipis.
5 siung bawang putih, cincang halus.
4 lembar daun bawang, ambil bagian hijaunya, dan potong
dengan ukuran 1 cm.
3 sendok makan minyak goreng untuk menumis.
SAUS:
3 sendok makan kecap ikan
3 sendok makan saus tiram
2 sendok makan tepung maizena , dilarutkan dengan sedikit
air
250 ml kaldu ayam
1 sendok makan saus sambal (saya menggunakan merek ABC)
1 sendok makan saus tomat (Saya menggunakan merek ABC)
Garam, gula pasir dan merica secukupnya
CARA MEMBUAT:
Panaskan 3 sendok makan minyak goreng didalam wajan atau
penggorengan
Masukkan dan tumis bawang putih dan bawang Bombay sampai
harum.
Kemudian, masukkan bakso sapi.
Tumis sampai matang.
Kemudian masukkan udang, aduk rata dan masak sampai udang
berubah warna.
Masukkan wortel, kembang kol dan jagung muda.
Masukkan kaldu ayam, kecap ikan, saus tiram, saus sambal,
saus tomat,garam, gula, dan merica.
Aduk rata dan masak sampai sayuran lunak.
Kemudian masukkan bok coy, dan daun bawang, aduk rata selama
1 menit.
Tuang larutan tepung maizena dan aduk sampai kuahnya kental.
Angkat dari kompor dan taruh dipiring saji.
Sajikan langsung dengan nasi dan menu makanan lainnya.
