JAVA CHICKEN CURRY (OPOR AYAM)


This Food is one of the popular chicken curry 
in Indonesia and usually served for special occasions 
such as Hari Raya Lebaran.
Today I share my Java Chicken Curry 
(Opor Ayam) recipe.


RECIPE IN ENGLISH


JAVA CHICKEN CURRY
(OPOR AYAM) 

INGREDIENTS:

1 kg of chicken drumstick 
5 boiled eggs
8 fried tofu
1 stalk lemongrass, crushed
500 cc of water
4 lime leaves
3 bay leaves
2 inchies of galangal
3 tablespoons vegetable oil, for sauteing


INGREDIENTS FOR MARINATE:

1 tablespoons tamarind water
1 teaspoon salt


SPICES: 

5 cloves of garlic 
4 cloves red onion (I used 1 big red onion)
4 pieces candle nuts, toasted
1 tsp. coriander powder
1/2 tsp. cumin powder
1/2 tsp. pepper
salt and sugar according to taste



HOW TO MAKE: 

Wash the chicken.
Marinate the chicken with 1 tbsp. tamarind water and 1 teaspoon salt, leave for 15 minutes, rinse and drain.
Grind the spices ingredients until smooth.
Heat up oil in a wok, add in the spice paste, lemongrass, lime leaves and bay leaves until fragrant.
Add chicken, stir until stiff.
Lower the heat and pour the coconut milk, season well with salt and sugar.
(If it looks too thick, you can always add up 500 cc of water or as you wish).
After a half-cooked, insert boiled eggs and fried tofu. Mix and stir well.
Stir constantly over low heat, until fully cooked around 30 minutes.
Remove and serve with steam rice or rice cake (lontong).


RESEP DALAM BAHASA INDONESIA


JAVA CHICKEN CURRY
(OPOR AYAM) 

BAHAN YANG DIBUTUHKAN:

1 kg paha ayam 
5 telor rebus
8 tahu goreng
1 ruas sereh 
500 cc santan kental
500 cc air 
4 daun jeruk
3 daun salam
2 cm lengkuas
3 sendok makan minyak goreng untuk menumis 


BAHAN UNTUK MARINATE:

1 sendok makan air asam jawa
1 sendok teh garam


BUMBU HALUS: 

5 siung bawang putih
4 siung bawang merah
(saya menggunakan 1 buah bawang merah ukuran besar)
4 buah kemiri, sangrai
1 sendok teh ketumbar bubuk
1/2 sendok teh merica
garam dan gula pasir secukupnya



CARA MEMBUAT: 

Cuci ayam hingga bersih.
Rendam ayam dengan 1 sendok makan air asam jawa dan 1 sendok teh garam, diamkan selama 15 menit, cuci dan tiriskan.
Haluskan bumbu halus sampai halus dengan food processor.
Panaskan penggorengan, Tumis bumbu halus, serai, daun jeruk dan daun salam sampai harum.
Masukkan ayam, aduk sampai berubah warna dan kaku.
Kecilkan api dan tuang santan, aduk rata dengan garam dan gula pasir.
(Jika kuah terlihat sangat kental, kita bisa menambahkan air sebanyak 500 cc atau sesuai selera).
Setelah setengah matang, masukkan telor rebus dan tahu goreng. 
Campur dan aduk rata.
Aduk perlahan-lahan dan masak dengan api kecil, sampai benar-benar matang sekitar kurang lebih 30 menit.
Angkat dan sajikan dengan nasi hangat atau lontong.
