CASSAVA LEAVES CURRY
(GULAI DAUN SINGKONG)

INGREDIENTS:

500 grams of cassava leaves, boiled half cooked.
4 bay leaves.
1 liter of coconut milk
200 grams anchovies
100 grams of prawns
100 grams of chicken


SPICES :

6 pieces of red chilli
8 cloves of red onion
5 cloves of garlic
4 pieces of candlenut
2 tsp. coriander powder
1 tsp. galangal powder
4 cm turmeric
2 tsp. shrimp paste
salt to taste
sugar to taste


HOW TO MAKE :

Saute the spices with bay leaves until fragrant.
Insert chicken and prawns, stir well until the colour changes.
Pour the coconut milk, wait until boiling.
Insert cassava leaves.
Cook until wilted cassava leaves and sauce thickens.
Just before you serve it, pour fried anchovy on top.

INGREDIENTS:

500 gram daun singkong, rebus setengah matang.
4 lembar daun salam.
1 liter santan
200 grams ikan teri medan, goreng.
100 grams udang
100 grams ayam.


BUMBU HALUS :

6 buah cabe merah
8 buah bawang merah
5 siung bawang putih
4 buah kemiri
2 sendok teh ketumbar bubuk
1 sendok teh lengkuas bubuk
4 cm kunyit
2 sendok teh terasi
garam secukupnya
gula pasir secukupnya



CARA MEMBUAT:

Tumis bumbu halus dengan daun sala sampai harum.
Masukkan ayam dan udang, tumis dan aduk sampai berubah warna.
Tuang santan, tunggu hingga mendidih.
Masukkan daun singkong.
Masak sampai daun singkong layu dan kuah mengental.
Sesaat sebelum diangkat, taburi dengan teri goreng.

GRILLED CHICKEN SOY SAUCE
(AYAM BAKAR KECAP)

INGREDIENTS :

8 chicken drumstick
salt to taste
2 tablespoons lemon juice
3 cloves red onions, chopped
3 cloves of garlic, chopped
1 tablespoon ginger, chopped
3 tablespoon margarine
5 tablespoon Indonesian Sweet Soy Sauce
1 teaspoon pepper.


HOW TO MAKE :

Marinade the chicken with salt and lemon juice, stir and let stand approximately 20 minutes.
Then rise with water.
Grind onion, garlic and ginger, then mix together.
Put chicken into the pan with ground spices and water until it covers the chicken.
Pour margarine, salt, pepper and Indonesian sweet soy sauce.
Boil the chicken until fully cooked and the half of the water evaporated.
Take out the chicken from pan, put on grill and brush it with a mixture of Indonesian 3 tablespoon Indonesian sweet soy sauce and 1 tablespoon margarine. 
Put aside and serve with rice and sambal terasi (shrimp chilli paste) and Indonesian sweet soy sauce.

BAHAN YANG DIGUNAKAN :

8 paha ayam
garam secukupnya
2 sendok makan perasan jeruk lemon
3 siung bawang merah, dicincang
3 siung bawang putih, dicincang
1 sendok makan, dicincang
3 sendok makan blueband
5 sendok makan kecap manis
1 sendok teh merica.



CARA MEMBUAT :

Marinate ayam dengan garam dan air perasan jeruk lemon, diamkan sekitar 20 menit.
Kemudian cuci bersih dengan air.
Haluskan bawang merah, bawang putih dan jahe, kemudian aduk rata.
masukkan ayam kedalam panci beserta bumbu halus dan air hingga menutupi ayam terebut.
Masukkan Blueband, garam, merica, dan kecap manis.
Godog ayam sampai matang dan air tinggal setengah bagian.
Ambil ayam dari panci dan bakar hingga matang sambil sesekali di olesin campuran 3 sdm kecap manis dan 1 sdm blueband.
Setelah matang taruh dipiring saji dan sajikan dengan nasi hangat plus sambal terasi dan kecap manis.
