GREEN COATED BANANA ICE (ES PISANG HIJAU)


This is a famous dessert originally from 
Makassar - South Sulawesi, Indonesia

RECIPE IN ENGLISH


Green Coated Banana Ice
Es Pisang Hijau

INGREDIENTS FOR COATING:

750 ml coconut milk
1 tbsp. butter
3 tablespoons oil
250 gr flour
250 gr rice flour
2 sheets Pandan leaves
2 tsp. Pandan Paste (Green Colouring)
1 tsp. Salt


Main Ingredients :

10 lady finger banana


How to make Green Coated Banana:

Steam banana until quite cooked, peel the skin and set aside.
Grind 2 sheets pandan leaves with coconut milk, then strain.
Mix coconut milk, butter, oil &  1 tsp. salt, simmer and whisk it until thicken.
Pour the flour and rice flour and knead until smooth (dough) with a small heat.
Set aside to cool.
Divide into 10 dough, roll about ½ cm thick.
Wrap each Banana.
Steam around 20 minutes until the skin looks soft and cooked.
Set aside to cool.


Complementary Ingredients:

Red Rose Syrup ABC
Ice
Sweetened condensed milk
jackfruit as you wish
Sweet Rice Flour Porridge (bubur Sum – Sum)


SWEET RICE FLOUR PORRIDGE
(BUBUR SUM-SUM)

Sweet Rice Flour Porridge (Bubur Sum-Sum)  is Indonesian traditional sweet dessert from central java.
The taste is very tasty and sweet.
This food is very easy to make. Here I will give you the recipe.

Ingredients:

35 grams of rice flour
100 grams granulated sugar
500 ml thick coconut milk
1 sheet of pandan leaf
½ tsp. Salt 


How to make:

Mix all ingredients in the medium saucepan.
Simmer until thicken with medium heat.
Set aside to cool.


Presentation (Last Step To Serve) :

Cut the green bananas as you wish.
Put Banana on the medium bowl or plate.
Put Ice shavings.
Put Jack fruit and Sweet Rice Flour Porridge (Bubur sum-sum).
Drizzle with syrup and sweetened condense milk.

RESEP DALAM BAHASA INDONESIA


Green Coated Banana Ice

Bahan Lapisan Kulit:

750 ml santan
1 sdm mentega
3 sdm minyak
250 gr terigu
250 gr tepung beras
2 lembar Daun pandan
2 sdt. Pasta pasta pandan
1 sdt. Garam 


Bahan Utama:

10 buah pisang 


Cara Membuat Lapisan Kulit:

Kukus pisang sampai cukup matang, kupas kulitnya, sisihkan.
Blender daun pandan bersama santan, kemudian saring.
Campur santan, mentega, minyak dan 1 sdt garam, didihkandan aduk-aduk sampai kental.
Tuang tepung terigu dan tepung beras aduk hingga benar-benar rata dan kalis dengan menggunakan api kecil.
Sisihkan dan biarkan sampai adonan dingin atau bersuhu ruangan.
Bagi adonan menjadi 10 bagian,tipiskan adonan kira-kira saja sekitar ½ cm tebalnya jangan terlalu tebal.
Bungkus masing-masing pisang.
Kukus sekitar 20 menit sampai kulit terlihat empuk dan  matang.
Angkat, sisihkan dan dinginkan sampai pada suhu ruangan.


BAHAN PELENGKAP:

Sirup Merah Rose ABC
Es serut
Susu Kental Manis
Nangka sesuai selera
bubur Sum – Sum


SWEET RICE FLOUR PORRIDGE
(BUBUR SUM-SUM)


Bahan Yang Dibutuhkan:

35 gram tepung beras
100 gram gula pasir
500 ml santan
1 lembar daun pandan 
½ sendok teh garam 


Cara Membuat:

Campur semua bahan kedalam panci berukuran sedang.
Aduk-aduk terus sampai kental dan menjadi bubur dengan menggunakan api sedang.
Sisihkan dan biarkan dalam keadaan dingin atau bersuhu ruangan.


Penyajiannya :

Potong Pisang menjadi beberapa bagian sesuai selera.
Letakkan kedalam mangkuk sedang atau piring saji.
Letakkan Es serut.
Letakkan nangka dan Bubur sum-sum
Siram dengan sirup dan susu kental manis secukupnya.
