KETUPAT SAYUR (RICE CUBES SERVED WITH VEGETABLE, EGGS, CHICKEN, AND PRAWN IN COCONUT SAUCE)


RECIPE IN ENGLISH


KETUPAT SAYUR
(Rice cubes, served with Vegetable, Eggs, Chicken, and Prawn in Coconut Sauce)

INGREDIENTS:

400 medium prawn, peeled
250 grams of snake beans, cut into pieces 3 cm
2 pieces of chokoes, peeled, cut into matchsticks
4 bay leaves
2 cm galangal, crushed
750 ml coconut milk
Salt to taste
5 boiled eggs
4 chicken drumstick

SPICES:

5 pieces of red chilli
1 big red onions
6 cloves of garlic
2 tsp. salt
2 tablespoons brown sugar, fine comb
1 tbsp. dried shrimp powder


HOW TO MAKE:

Sauté the spices with the bay leaves and galangal until fragrant.
Add shrimp and chicken drumstick, stirring until it changes colour.
Add chokoes and snake beans, stir until wilted.
Add boiled eggs, mix well.
Add coconut milk, bring to a boil.
Put salt as you wish if not salty.
Cook until fully cooked and served with rice cube in the bowl.

BAHAN YANG DIGUNAKAN:

400 udang ukuran sedang, kupas
250 gram kacang panjang, potong-potong 3 cm
2 buah labu siam, kupas, potong-potong bentuk korek api
4 lembar daun salam
2 cm lengkuas, memarkan
750 ml santan
Garam secukupnya
5 butir telur rebus
4 buah paha ayam

BUMBU HALUS:

5 buah cabe merah
1 buah bawang merah ukuran besar
5 siung bawang putih
2 sdt garam
2 sdm gula jawa, sisir halus
1 sdm ebi kering bubuk


CARA MEMBUAT:

Tumis bumbu halus beserta daun salam dan lengkuas sampai harum.
Masukkan udang, dan paha ayam aduk hingga berubah warna.
Tambahkan labu siam dan kacang panjang, aduk hingga layu.
Tambahkan telur rebus, aduk rata.
Masukkan santan, didihkan.
Bubuhkan garam jika kurang asin.
Masak sampai matang dan sajikan denga lontong didalam mangkuk
