INDONESIAN POTATO MUD CAKE
(KUE LUMPUR KENTANG)

INGREDIENTS:

200 g flour
300 g potatoes. Steamed and Mashed
100 g sugar
½ tsp. salt
1 tsp. vanilla powder
3 eggs
400 ml coconut milk
2 tbsp. margarine, melted
Sultana as you wish


HOW TO MAKE:

Combine flour, potato mashed, sugar, egg, salt and vanilla in a large bowl.
Whisk with an electric mixer at medium speed until well blended.
Add coconut milk little by little, keep mixing with electric mixer until mix well and fluffy, then turn off.
Add melted butter, mix well with spatula.
Preheat the oven to 180 degrees.
Pour batter in muffin mould that have been spread with margarine
Bake for approximately 10 minutes
Then sprinkle with sultana and baked again until cooked
Lift and remove the mould.

BAHAN YANG DIBUTUHKAN:

200 gram tepung terigu
300 gram kentang, kukus dan haluskan
100 gram gula pasir
1/2 sdt garam
1 sdt vanili
3 butir telor
400 ml santan
2 sdm mentega, cairkan
Kismis secukupnya.


CARA MEMBUAT:

Campurkan tepung terigu, kentang halus, gula pasir, telor, garam dan vanili didalam sebuah mangkuk besar
Kocok dengan mixer dengan kecepatan sedang sampai tercampur rata
Tuangkan santan sedikit demi sedikit sambil diaduk rata.
Masukan mentega cair, aduk rata
Panaskan oven dengan suhu 180 derajat.
Tuangkan adonan didalam cetakan muffin yang telah diolesi margarine
Panggang selama kurang lebih 10 menit
Lalu taburi dengan kismis dan panggang lagi sampai matang
Angkat dan keluarkan cetakan.
