CWIE NOODLES FROM MALANG (CWIE MIE MALANG)


Cwie Mie is almost similar with Chicken Noodle, but the chicken topping used for Cwie Mie is drier than Chicken Noodle and Ground.
Cwie mie do not use Indonesian sweet soy sauce.
The taste is more savoury than chicken noodle.
It taste better than Chicken Noodle.

Ingredients:

egg noodles as you wish
fried wonton
Cooking oil
2 tbsp fried onions
1 tbsp finely sliced shallot
chilli sauce as you wish


Chicken Topping :

2 tablespoons cooking oil
1 clove garlic, chopped
1 cm ginger, chopped
100 grams chicken meat, finely chopped
1/4 tsp pepper
1/4 tsp salt
1 tsp soy sauce


Soup:

1 tablespoons cooking oil
4 cloves garlic, chopped
1/2 tsp. grated ginger
1000 ml chicken stock
1 tsp. salt
1/2 tsp. pepper
1 chicken breast fillet, cut into cubes


How To Make Chicken Topping:

Heat oil inside frying pan, saute garlic and ginger until fragrant. 
Put chopped chicken, mix until granulates. 
Pour soy sauce, mix well, put aside, wait until warm.
Grind sauted chicken with food processor until it granulates, set aside.


How To Make Soup: 

Boil diced chicken until the water is boiled to make chicken stock. 
In the meantime, Heat oil, saute garlic and ginger until fragrant, put aside. 
Put them in the chicken stock until boiling. 
Add salt and pepper.
Boil for another 5 minutes.


Serving: 

Boil water in stockpot, put dry noodle inside boiling water. 
Boil noodle until soft and take out and dry. 
when the noodle is cooked, pour 1 tsp of vegetable oil into a bowl, mix well.
Fry wonton until crispy and lift. 
Put one tablespoon of ground chicken on top of noodle into a bowl 
(me : bowl made of wonton skin). 
Sprinkle fried onion, and shallot on top. 
Put the soup into a separate bowl. 
Serve while hot with the soup, fried wonton, chilli sauce.

Bahan Yg Digunakan:

mie telo mentah, sesuai keinginan
pangsit goreng
minyak goreng
2 sendok makan bawang goreng
1 sendok makan bawang goreng yang telah diiris tipis-tipis.
saus sambal dan cabe rawit rebus sesuai keinginan


Taburan :

2 sendok makan minyak goreng
1 siung bawang putih, cincang halus
1 cm jahe, cincang halus
100 gram daging ayam, cincang halus
1/4 sendok teh merica bubuk
1/4 sendok teh garam
1 sendok teh kecap asin


Kuah:

1 sendok makan minyak goreng
4 siung bawang putih, haluskan
1/2 sendok teh jahe parut
1000 ml kaldu ayam
1 sendok teh garam
1/2 sendok teh merica
1 filet dada ayam, potong dadu


Cara Membuat Taburan Ayam :

Panaskan minyak goreng di wajan.
Tumis bawang putih dan jahe sampai harum.
Masukkan ayam cincang, aduk sampai rata sampai membentuk butir.
Tuang kecap asin, aduk rata.
Angkat dan sisihkan.
Tunggu sampai dalam keadaan hangat.
Haluskan daging ayam tumis dengan food processor hingga berbutir halus, sisihkan.


Cara Membuat Kuah: 

Didihkan air bersama dengan potongan dadu dada ayam sampai menjadi kaldu ayam.
Sewaktu kaldu masih tetap dimasak, Panaskan minyak goreng di wajan, tumis bawang putih dan jahe sampai harum, sisihkan.
Masukkan tumisan kedalam kaldu ayam.
Tambahkan garam dan merica.
Didihkan lagi sekitar 5 menit. Sisihkan.


Penyajiannya: 

Masak air didalam panci, masukkan mie telor mentah kedalam air yang telah mendidih.
Masak mie sampai lunak, angkat dan tiriskan.
Ketika mie telah matang, letakkan didalam mangkok dan capur dengan 1 sdt. minyak goreng, aduk rata.
Goreng pangsit hingga kering dan berwarna kecoklatan, angkat dan tiriskan.
Letakkan 1 sendok makan toping ayam diatas mie.
(Kalau saya menggunakan mangkok yang terbuat dari kulit pangsit)
Taburi bawang goreng, dan daun bawang diatasnya.
Sajikan kuah di mangkok yang terpisah.
Sajikan selagi panas dengan kuah, pangsit goreng dan sambal.
