BANDUNG STYLE BEEF SOUP
(SOTO BANDUNG)

INGREDIENTS:

500 grams of beef
2 litre of water
7 cloves garlic, finely chopped
4 red onions, finely chopped
(In Australia, I use 1 big red onion)
2 stalks lemongrass, white part, crushed
5 bay leaves
2 cm ginger, finely chopped
Salt as you wish
Sugar as you wish
Pepper as you wish
3 pieces radish, cut into thin round and half-cooked stew
4 tablespoons oil for sautéing


COMPLEMENT:

1 spring onion, cut into 1 cm
Fried onions
Chilli with Indonesian Sweet Soy Sauce


HOW TO MAKE:

Boil meat until tender, then cut into pieces box, set aside.
Measure broth to 2  litre.
Heat oil and sauté garlic, onion, bay leaf, lemon grass and ginger until fragrant.
Put it in the broth and then reheat the broth with medium heat.
Put the meat, and radish, and other remaining ingredients and cook until the spices to infuse and mature.
Serve the soup with a complement.

BAHAN YANG DIPERLUKAN:

500 gram daging sapi
2 liter air
7 siung bawang putih, rajang halus
4 butir bawang merah, rajang halus
(Di Australia, saya menggunakan 1 bawang merah ukuran besar)
2 batang serai, ambil bagian putihnya, memarkan
5 lembar daun salam
2 cm jahe, rajang halus
Garam secukupnya
Gula pasir secukupnya
Merica bubuk secukupnya
3 buah lobak, potong tipis bulat dan rebus setengah matang
4 sdm minyak untuk menumis


PELENGKAP:

Kacang kedelai goreng
1 batang daun bawang, potong 1 cm
Bawang goreng
Sambal kecap dan cabe rawit


CARA MEMBUAT:

Rebus daging sampai empuk, kemudian potong-potong kotak, sisihkan.
Ukur kaldunya sampai 2 liter.
Panaskan minyak lalu tumis bawang putih, bawang merah, daun salam , serai dan jahe sampai wangi.
Masukkan ke dalam kaldu kemudian panaskan kaldu kembali dengan menggunakan api sedang.
Masukkan daging, dan lobak, dan sisa bahan lainnya lalu masak sampai bumbu meresap dan matang.
Sajikan soto dengan pelengkapnya.
