JAVANESE FRIED NOODLE (MIE GORENG JAWA)

JAVANESE FRIED NOODLE
(MIE GORENG JAWA)

INGREDIENTS:

1 packet of instant egg noodle (220 gr)
4 spoon of sweet soy sauce
2 spoon of oyster sauce
1/2 teaspoon of salt
5 onions, sliced
2 teaspoon of fish sauce
1 stick of shallot, sliced
1 carrot, cut to the size of match stick
5 choy sum, cut
5 meatballs, cut as you wish
2 eggs, fried scrambled.

GROUND SPICES:

4 cloves of garlic
1/2 teaspoon of pepper
4 candle nut
1 spoon of dried shrimp, soak into hot water

COMPLEMENTARY INGREDIENTS:

Crackers

METHOD:

Soak noodle into boiling water and drain
Pour noodle with cold water to cool down
Add sweet soy sauce and oyster sauce to the noodle
Add salt, stir well and taste. You could also add powder stock or taste enhancer. Set aside.
Saute onion and ground spices until fragrant. Insert fish sauce or soy sauce, shallot and carrot, mix well. Let the carrot cooked.
Add chou sum, meatball, scrambled egg and the noodle.
Stir well and taste
When cooked, lift and serve with complementary ingredients

INGREDIENTS:

1 bks (220gr) mi telur kering
4 sdm kecap manis
2 sdm saus tiram
1/2 sdt garam
5 butir bawang merah, iris tipis
2 sdt kecap ikan/asin
1 batang daun bawang, iris halus
1 bh wortel, potong korek api
5 batang sawi hijau, potong-potong
5 butir bakso, potong sesuai selera
2 butir telur, dibuat orak arik

BUMBU HALUS:

4 siung bawang putih
1/2 sdt merica bulat
4 butir kemiri
1 sdm ebi yang sudah direndam air panas sampai empuk

PELENGKAP :

Kerupuk

CARA MEMBUAT:

Rebus mi sampai matang, angkat dan tiriskan.
Siram dengan air dingin beberapa kali sampai mi menjadi dingin.
Tuangi mi dengan kecap manis dan saus tiram.
Beri garam, aduk rata dan cek rasanya. Jika suka bisa ditambahkan kaldu bubuk atau penyedap rasa. Sisihkan.
Tumis bawang merah dan bumbu halus sampai wangi. Masukkan kecap ikan atau kecap asin, daun bawang dan wortel, aduk rata. Biarkan wortel matang.
Masukkan sawi hijau, bakso,telur orak arik dan mie.
Aduk rata sampai ke dasar wajan.
Cek rasanya.
Jika telah matang angkat mi dan sajikan hangat beserta pelengkap.
