INDONESIAN CHICKEN MUSHROOM NOODLE (MIE AYAM JAMUR)


Bakmi ayam is an Indonesian dish of yellow wheat noodle (bakmi in Indonesian) topped with diced chicken meat (ayam), seasoned with soy sauce, and usually served with a chicken broth soup. The name is shortened to mie ayam or mi ayam. Bakmi ayam is a popular Chinese Indonesian dish and common in Indonesian cities. It can be served in a restaurant or from a hawker's trolley.

INDONESIAN CHICKEN MUSHROOM NOODLE

INGREDIENTS:

fresh egg noodle, boiled until cooked
1 tsp. sesame oil
meatballs as you wish
chilli sauce

TOPPINGS:

1 tsp. dried raddish
finely sliced green onions


Stir Fry Chicken Mushroom:

400 g boneless and skinless chicken, cut into smaller pieces (1X1X2 cms)
150 g white mushrooms, quartered
4 cloves garlic, chopped
3 cm long ginger, chopped
2 tbsp Indonesian sweet soy sauce
3 tbsp Indonesian Light Soy Sauce
1 tbsp oyster sauce
400 mL chicken broth/water
pepper as you wish
1 tsp. sugar
2 tbsp Vegetable oil


Chicken Broth:

Chicken bone or chicken feet
Minced garlic
Water


HOW TO MAKE :


*Stir Fry Chicken Mushroom:

Heat vegetable oil on the saucepan.
Stir fry garlics and ginger until fragrant.
Add chicken, then stir frequently to let the aroma of ginger and garlic stick to chicken and cook until chicken changes colour.
Add mushrooms, stir and mix well.
Add Indonesian sweet soy sauce, Indonesian Light soy sauce, oyster sauce, chicken broth, pepper and sugar.
Cook until seasoning is absorbed and chicken is cooked. Set aside.
There might be a small amount of broth left in the cooking, so we can use up for assembling the noodles later on.


*Chicken Broth:

Put chicken bone or chicken feet, minced garlic and water in saucepan.
 Boiled with low heat.
After boiled, add salt and pepper to taste.


* How to Assemble and Serve 1 Portion of Chicken Mushroom Noodle:

Prepare two bowls; one is big and another one is smaller size.
Reboil bakso with broth and place in a small bowl and sprinkle with dried raddish.
 In a big bowl, combine 2.5 tbsp sesame oil, 2.5 tbp Indonesian light soy sauce and a dash of ground white pepper. Add 1 portion cooked egg noodle and mix well.
Place stir fry chicken mushroom on top of noodle.
Sprinkle green onions over.
Serve those two bowls with sambal bakso on the side.


The way I eat:

I pour some of the broth from a small bowl into a big bowl. 
Add chilli sauce and mix well with my chopsticks

Bahan-Bahan:

Mie telur, rebus sampai matang.
1 sendok teh minyak wijen
bakso sapi sesuai selera

saus sambal

TOPING:

1 sendok teh lobak kering
Daun bawang yang sudah dicincang halus. 



AYAM JAMUR:

400 g dada ayam, potong-potong menjadi bagian kecil (1X1X2 cms)
150 g jamur kancing, belah menjadi 2 bagian.

4 siung bawang putih, cincang
3 cm jahe, cincang
2 sendok makan kecap manis
3 sendok makan kecap asin
1 sendok makan saus tiram
400 mL kaldu ayam
merica secukupnya
1 sendok teh gula pasir
2 sendok makan minyak goreng


KALDU AYAM:

Tulangan daging ayam atau ceker ayam
Bawang putih cincang
Air


CARA MEMBUAT:


* AYAM JAMUR UNTUK TOPING:

Panaskan minyak goreng dalam panci.
Tumis bawang putih dan jahe sampai harum.
Tambahkan daging ayam, aduk terus menerus sampai aroma bawang putih dan jahe menyatu pada ayam dan daging ayam berubah warna.
Tambahkan jamur kancing, aduk rata.
Tambahkan kcep manis, kecap asin, saus tiram, kaldu ayam, merica dan gula pasir.
Masak sampai kuahnya meresap kedaging dan jamur. Sisihkan.
Sisa setengah dari kaldu ayam, dapat dibuat kuah untuk mie ayam, dan disajikan berdampingan saat mau disajikan dan disantap.


*KALDU AYAM:

Letakkan tulangan ayam atau ceker ayam, bawang putih cincang dan air didalam panci.
Rebus dengan menggunakan api kecil.
Setelah mendidih, tambahkan garam dan merica secukupnya.



* CARA MERACIK DAN MENYIAPKAN1 PORSI MIE AYAM JAMUR:

Siapkan 2 buah mangkok, satu mangkok besar dan yang satunya mangkok kecil.
Rebus bakso dengan kuah kadlu ayam dan letakkan kedalam mangkuk kecil dengan ditaburi lobak kering.

Didalam mangkuk besar, campur 2.5 sendok makan minyak wijen, 2.5 sendok makan kecap asin dan merica secukupnya.
Tuang mie telur kedalamnya dan aduk rata dengan bumbu tadi.
Letakkan tumisan jamur ayam diatas mie telur. 
Taburi dengan daun bawang. 
Sajikan dua mangkuk tersebut dengan saus sambal.
Siap santap.


Cara Menyantapnya:

Tuang kaldu yang ada didalam mangkuk kecil kedalam mangkuk besar yang berisi mie dan tumisan ayam jamur.
Tambahkan saus sambal, dan aduk rata dengan sumpit.
Siap disantap..hmmm ...yummieee
