CASSAVA LEAVES CURRY

INGREDIENTS:
500 grams of cassava leaves, boiled half cooked.
4 bay leaves.
1 liter of coconut milk
200 grams anchovies
100 grams of prawns
100 grams of chicken
SPICES :
6 pieces of red chilli
8 cloves of red onion
5 cloves of garlic
4 pieces of candlenut
2 tsp. coriander powder
1 tsp. galangal powder
4 cm turmeric
2 tsp. shrimp paste
salt to taste
sugar to taste
HOW TO MAKE :
Saute the spices with bay leaves until fragrant.
Insert chicken and prawns, stir well until the colour changes.
Pour the coconut milk, wait until boiling.
Insert cassava leaves.
Cook until wilted cassava leaves and sauce thickens.
Just before you serve it, pour fried anchovy on top.

INGREDIENTS:
500 gram daun singkong, rebus setengah matang.
4 lembar daun salam.
1 liter santan
200 grams ikan teri medan, goreng.
100 grams udang
100 grams ayam.
BUMBU HALUS :
6 buah cabe merah
8 buah bawang merah
5 siung bawang putih
4 buah kemiri
2 sendok teh ketumbar bubuk
1 sendok teh lengkuas bubuk
4 cm kunyit
2 sendok teh terasi
garam secukupnya
gula pasir secukupnya
CARA MEMBUAT:
Tumis bumbu halus dengan daun sala sampai harum.
Masukkan ayam dan udang, tumis dan aduk sampai berubah warna.
Tuang santan, tunggu hingga mendidih.
Masukkan daun singkong.
Masak sampai daun singkong layu dan kuah mengental.
Sesaat sebelum diangkat, taburi dengan teri goreng.
