I love this cracker.
Today, I decided to make Peanut cracker called Rempeyek.
Rempeyek is a deep fried savoury Indonesian cracker, made from rice flour and tapioca starch.
Yeah I made it and it was very successful.
RECIPE IN ENGLISH
PEANUT CRACKER

INGREDIENTS:
150 gr rice flour
50 gr tapioca flour
1 egg yolk
350 ml thick coconut milk
1 teaspoon salt or according to taste
1/2 tsp sugar
50 grams of peanuts that have been chopped
SPICES :
5 cloves of garlic
1 tsp toasted coriander
5 grains of toasted candlenuts
2 cm Kaempferia galanga (kencur)
HOW TO MAKE:
Mix the rice flour, tapioca flour in a container.
Insert the spices, salt, sugar, egg yolks and coconut milk.
Stir until all well blended.
The dough is ready to be fried.
Prepare a large frying pan.
Pour much cooking oil.
Heat the oil. (With small flame)
Pour the batter into the pan around the periphery until the dough is scooped out.
(Make it thin to make crispy crackers)
Do the same thing until the dough runs out.
Remove and drain on paper towel to cool.
Store in a clean jar and airtight.

BAHAN:
150 gr tepung beras
50 gr tepung tapioka
1 kuning telur
350 ml santan kental
1 sendok teh garam atau secukupnya
1/2 sdt gula pasir
50 grams kacang tanah yang sudah di cincang
BUMBU HALUS:
5 siung bawang putih
1 sdt ketumbar sangrai
5 butir kemiri sangrai
2 cm kencur
CARA MEMBUAT:
Campur menjadi satu tepung beras, tepung tapioka dalam suatu wadah.
Masukkan bumbu halus, garam, gula, kuning telur dan air santan.
Aduk-aduk hingga semua tercampur rata.
Adonan siap untuk digoreng.
Siapkan wajan penggorengan besar.
Tuang minyak goreng yang agak banyak.
Panaskan minyak. (Gunakan api Kecil)
Tuangkan adonan ke sisi pinggiran wajan secara mengelilingi hingga habis adonan disendok. (usahakan tipis-tipis biar garing rempeyeknya)
Lakukan hal yang sama sampai adonan habis.
Angkat dan tiriskan diatas kertas tissue sampai dingin.
Simpan dalam toples yang bersih dan kedap udara.
