This chicken rice porridge (congee) is my favourite. When I was young, my mother used to make me this chicken rice porridge.
After married and moved overseas, I have to be able to cook it myself. By asking my mother when I went home last year, finally I can make it myself.

RECIPE IN ENGLISH
CHICKEN CONGEE..
(BUBUR AYAM)

Ingredients :
1 cup rice
6 cups water chicken broth (or more around add 2 cups more)
1/2 cup green onions, chopped or minced.
1 cup cooked chicken, shredded
1/4 cup ginger, peeled and minced
salt to taste
pepper to taste
dash sesame oil
dash sesame oil
How To Make Chicken Broth :
Boil the chicken (with bone) in a pan with water almost full.
pour salt to taste.
Boil the chicken until tender.
Set aside.
(Chicken broth is just water, chicken, and salt added at the end)
I defat my chicken broth and add salt to taste.
After the chicken is tender, I remove the skin, bones, cartilage, and fat from the chicken and shred the remaining meat with two forks.
Shredding the chicken.
Set aside.
Wash the rice under cold water around 2 rinses.
Place the rice and 6 cups of chicken broth in a medium saucepan and bring to a boil.
Turn the heat to Medium to a simmer.
Keep stirring the rice so it isn’t sticking to the bottom of the pan.
Stir in and add some more chicken broth as necessary if the congee starts to get too thick, about a cup at a time.
Turn the heat to high, bring it to a boil, and reduce to a simmer.
Continue this until the rice is practically disintegrating and very soft.
After the porridge is cooked, turn off the flame.
Set a side.
Minced ginger
Sliced green onions.
After everything ready, turn on the flame.
(shredded chicken, minced ginger, and sliced green onions)
Add more broth to achieve a soupy consistency or continue to simmer to desired thickness.
Add the green onions, ginger, and shredded chicken.
Stirr in.
Add Salt to taste (don’t use soy sauce)
Add pepper to taste.
Stir in a dash of sesame oil
Mix well
Serve hot with :
Sliced Chinese doughnuts.
Dried radish.
Chicken Floss.
Crakckers.
Or any other add-ins.
Ready To eat with chilli.
RESEP DALAM BAHASA INDONESIA
CHICKEN CONGEE..
(BUBUR AYAM)

Bahan - Bahan Yang Dibutuhkan :
1 cup beras
6 cup kaldu ayam (atau mau lebih bisa ditambahkan 2 cup lagi)
1/2 cup daun bawang, dirajang halus.
1 cup ayam yang sudah digodog, suwir-suwir.
1/4 cup jahe, dikupas dan dicincang halus.
garam secukupnya.
merica secukupnya.
satu atau dua tetes minyak wijen.
Cara Membuat Kaldu Ayam :
Godog ayam beserta tulangnya didalam panci dengan air menutupi ayam tersebut.
Masukkan garam secukupnya.
Masak ayam sampai empuk.
Sisihkan.
(Kaldu ayam dibuat hanya membutuhkan air, ayam dan garam secukupnya)
Saya hilangkan lemak-lemak ayam saat membuat kaldu ayam dan menambahkan garam secukupnya.
Setelah ayam empuk, Saya hilangkan kulit ayam, tulang, tulang rawan dan lemak dari ayam dan suwir-suwir daging ayam dengan menggunakan 2 buah garpu.
Suwir-suwir ayam.
Sisihkan.
Cuci bersih beras sebanyak dua kali cuci.
Taruh beras kedalam panci sedang.
Tambahkan 6 cup kaldu ayam.
Godog atau masak beras dengan menggunakan api sedang.
Aduk-aduk beras sesering mungkin agar tidak lengket dan gosong di bawah panci.
Aduk dan tambahkan kaldu ayam jika dibutuhkan dan jika bubur sudah mulai mengental padat. (tambahkan satu cup setiap waktu)
Besarkan api, sampai mendidih, setelah mendidih kecilkan apinya.
Lanjutkan sampai beras sangat lembut atau berubah menjadi bubur.
Setelah menjadi bubur, matikan api.
Sisihkan.
Cincang Jahe.
Daun Bawang Dirajang halus-halus.
Setelah semuanya siap, nyalakan api kembali.
(ayam suwir, jahe cincang, and irisan daun bawang)
Tambahkan kaldu ayam untuk mencapai bubur yang halus atau lanjutkan dengan api kecil sampai kekentalan diinginkan.
Masukkan daun bawang, jahe dan ayam suwir.
Aduk terus.
Tambahkan garam secukupnya.
Tambahkan merica secukupnya.
Aduk rata.
Tambahkan beberapa percikan minyak wijen.
Cara Menyajikannya :
Beberapa potong cakwe.
Lobak kering.
Abon ayam.
Kerupuk.
Atau dapat ditambahkan bahan lain sesuai selera.
Siap Dimakan Dengan Sambal.
